How it is made

Trimerization of acetaldehyde and catalytic air oxidation of the resulting hexadienal.

In the presence of salts of divalent transition metals as catalysts, ketene and 2-butenal react at 30-80 ยฐC to give a polymeric ester of 3-hydroxy-4-hexenoic acid with a molecular mass greater than or equal to about 2000. This polyester can be cleaved to give sorbic acid in good yield by either bases or acids (e.g., hydrochloric acid), alternatively, cleavage can be effected by metal-complex catalysts.
