About flavors and fragrances
The flavour and fragrance industry creates the tastes and scents of food, beverages, perfumes, personal care and household products. Flavourists and perfumers work with thousands of raw materials, from single aroma molecules to essential oils and extracts. This page groups them by function and chemical family, covering flavouring agents, fragrance ingredients, terpenes, esters and lactones, aldehydes and ketones, phenolic and sweet notes, musks, sulfur and nitrogen compounds, cooling agents and essential oils.

Large flavour and fragrance houses, mid-size compounders and in-house teams at consumer goods companies all buy aroma chemicals and naturals. Quality is judged both by analysis and by smell or taste, so suppliers provide an odour or taste standard and match each batch to it. Prices for naturals move with harvests, weather and currency, while synthetic aroma chemicals follow petrochemical and turpentine feedstock costs.
Rules differ for flavours and fragrances. Flavour ingredients must be permitted for food use, for example through FEMA GRAS status in the US or the EU Union list, and natural flavour claims require proof of natural origin. Fragrance ingredients must follow the IFRA Standards and allergen labelling rules for cosmetics and detergents, including the expanded EU list of fragrance allergens. When you post a request, give the material name and CAS number, flavour or fragrance grade, natural or synthetic, purity and odour requirements, and the documents you need, such as natural certificates, IFRA statements, allergen data, halal and kosher certificates.

Frequently asked questions
Quick answers about sourcing flavors and fragrances chemicals on CompoundList.
Can I buy both flavour and fragrance grades here?
Yes. Many aroma chemicals are offered in both grades. Flavour grades meet food rules such as FEMA GRAS and the EU Union list, while fragrance grades meet perfumery and IFRA requirements.
What documents should I ask for?
A certificate of analysis, safety data sheet, odour or taste conformity, IFRA statement, allergen data, natural certificates where relevant, and halal and kosher certificates for flavours.
Why do natural material prices change so much?
Natural raw materials depend on harvests, weather and currency in producing countries, so supply and price can vary from season to season.
Are cooling agents listed?
Yes. Menthol and synthetic cooling agents used in oral care, confectionery and personal care have their own function page.
