About flavors and fragrances
Flavours and fragrances are built from aroma molecules and natural extracts. Perfumers combine them into fragrance compounds for fine fragrance, personal care, household products and candles, while flavourists use food-grade materials to create flavours for beverages, dairy, savoury foods, confectionery, oral care and tobacco alternatives. This section covers single aroma chemicals grouped by chemical family and odour type, food-grade flavour ingredients, cooling agents, musks and fixatives, and essential oils and natural extracts.

Many aroma chemicals are sold in two grades. Flavour grades must meet food rules, such as the FEMA GRAS list in the US, the EU Union list of flavouring substances and JECFA specifications, and often need halal and kosher certificates. Fragrance grades follow the IFRA Standards, which limit or prohibit certain materials in each product category, and must be checked against allergen labelling rules such as the expanded EU list of fragrance allergens.
When you request quotes, name the material by its common name and CAS number, state flavour or fragrance grade, and ask for odour or taste conformity to your standard, purity by GC, the isomer ratio where it matters, and whether the material is natural, nature-identical or synthetic. Natural claims require proof of origin and, for some markets, certification of the natural status under the local flavouring rules.

Frequently asked questions
Quick answers about buying flavors and fragrances on CompoundList.
What is the difference between flavour grade and fragrance grade?
Flavour grade materials are made and certified for food use and meet food rules such as FEMA GRAS, the EU flavouring list and JECFA. Fragrance grade materials meet perfumery standards and IFRA requirements but are not intended for food.
What are the IFRA Standards?
They are the safety standards of the International Fragrance Association, which restrict or prohibit certain fragrance materials in each product category. Fragrance compound makers certify compliance with them.
How can I verify that a natural material is really natural?
Ask for a natural certificate stating the raw material and process, the GC profile and, for high-value materials, isotope ratio analysis such as carbon-14 or SNIF-NMR, which can distinguish natural from synthetic origin.
Why are some aroma materials sold as dilutions?
Very potent materials such as sulfur compounds and some musks are used in tiny amounts. Dilutions in ethanol, propylene glycol or other carriers make them easier to dose and can improve stability.
