About esters and lactones
Aroma esters and lactones give fruity, floral, creamy and sweet notes. Esters such as ethyl butyrate, isoamyl acetate, ethyl acetate, hexyl acetate, benzyl acetate, linalyl acetate and methyl anthranilate recall apple, banana, pear and grape, while lactones such as gamma-decalactone, gamma-undecalactone, delta-decalactone and whisky lactone give peach, coconut and cream notes.

Esters are made by reacting an acid with an alcohol, and many natural versions are produced by fermentation or enzymatic esterification for natural flavour claims. They are among the most used flavour materials in beverages, confectionery and dairy, and in fruity fragrances for personal care and household products.
Ask for purity by GC, acid value, odour and taste conformity, water and, for lactones, the enantiomeric ratio where relevant, since the natural enantiomer can smell different. Specify flavour or fragrance grade and natural or synthetic. Natural esters need documentation of the raw material and process. Many low molecular weight esters are flammable and ship as dangerous goods.
