About phenols, vanillin and sweet notes
This group covers phenolic, spicy and sweet aroma materials. Vanillin and ethyl vanillin are the most traded flavour molecules in the world, joined by eugenol and isoeugenol with clove notes, anethole with aniseed notes, thymol and carvacrol with herbal notes, guaiacol and smoky phenols, coumarin with a hay-like sweetness, heliotropin and maltol.

Vanillin is produced from guaiacol, from lignin in wood pulp, or by natural routes such as fermentation of ferulic acid, and these grades differ strongly in price and in the claims a brand can make. Eugenol and anethole are often extracted from clove and star anise oil, and are used both as flavours and as starting materials for other aroma chemicals.
Ask for purity by GC, melting point, odour and taste conformity, origin and route for natural grades, and heavy metals for food use. Coumarin is limited in food in many markets and must be declared as a fragrance allergen above set levels. Isoeugenol and eugenol are also restricted under IFRA Standards.
