About food antioxidants

Food antioxidants slow the oxidation that causes rancidity, off flavours and browning. The group includes ascorbic acid and sodium ascorbate, erythorbic acid and sodium erythorbate, tocopherols and mixed tocopherol concentrates, rosemary extract, ascorbyl palmitate, the synthetic antioxidants BHA, BHT and TBHQ, propyl gallate, and synergists such as citric acid and EDTA salts that bind pro-oxidant metals.

Read more about food antioxidants

Oils and fats, snacks, cereals, meat products, beverages and feed are the main uses. Water-soluble antioxidants such as ascorbic acid suit beverages and cured meats, while fat-soluble ones such as tocopherols, TBHQ and rosemary extract protect oils and fried foods. Natural options have gained share because many consumers prefer clean labels.

Ask for the food grade specification, assay, form, carrier for blends and concentrates, and the active content for natural extracts. Approvals differ by country. TBHQ, for example, is permitted in the US and many other markets with maximum levels, and some synthetic antioxidants are not permitted in certain food categories. Feed grade antioxidants such as ethoxyquin have their own regulatory history, so confirm current status.
